Apple Flan, Brendan's favorite Irish Dessert

filling: 2T butter 6T sugar 5 cooking apples 1 egg , grated rind of 1 lemon

pastry: 1 1/2 c flour 1t salt 1/2c margarine 1/4c sugar 4T cold water 1 egg yolk,beaten

preheat 400 degrees

sift the flour & salt. Rub in butter until mixture looks like fine bread crumbs. Add sugar & mix well. Beat the egg yolk and add the water. Add to dough. Mix w/ fork until dough is stiff. Form into a ball and refrig for 1 hour.

melt butter & stir in sugar, grated rind & juice of lemon. Peel, core and chop apples
and stir into the butter & sugar. Mix in beaten egg, stir well. Turn the filling into a flan ring or pie plate. Roll out pastry dough and cover filling, brushing w/a little beaten egg or milk.

Bake at 400 for 35 min.
